Seafood Symphony

My niece, Tonya, and husband Rodney, invited us to dinner on Saturday night.  Wow, what a treat!  We knew the food and company would be fabulous, as usual.  I think it could be best described as a Seafood symphony.

We started the evening with  fresh bacon-wrapped scallops, roasted in the oven to perfection.  The bacon was nice and crispy, leaving the scallops still nice and juicy...........

Jumbo shrimp, with a nice tangy seafood sauce for dipping............

 and hubby brought along some fresh mussels that he had steamed in beer, onions and fresh green pepper....

The appetizers washed down well with some great white wine.  We all sat around the kitchen, chatting and having too much fun, when Rodney started to prepare the main course.....fresh salmon......he did a simple pan-fry...........

and, as always, cooked it to perfection.........

Along with Tonya's version of roasted potatoes......

We all had a magnificent feast.......but wait, it wasn't all done yet........

Who can resist a dollop of whipped cream dripping from the beater like that??!!!??

Tonya made a nice light dessert, of fresh chopped fruit and berries with whipped cream, served in milk and white chocolate tarts.  Did I say Yummmmy?

It truly was a meal fit for a king.......Thanks you guys!!!!!

Welcome 2014!!!!

Happy New Year everyone!

Well, no resolutions and promises, but 2014 holds some pretty fabulous things in store for our family........  

Our only daughter is marrying the most fabulous young man on June 7!!  Then to top that off, my wonderful husband of 31 years will retire in August!  

We have a lot to be thankful for and so much to look forward to in 2014.
  
My sincere wish for all of you is health and happiness in whatever you do-----Take care and I will try to pay more attention to my blog in 2014.

Magical Forest

Yes...you read right!  My niece and I, along with a bunch of her co-workers went by the Kinsmen Center in Torbay to view the "Magical Forest".  This is a fundraiser where 15 Christmas trees have been professionally decorated for the viewing pleasure of the general public for a mere toonie---WOW, WHAT A TREAT!!  Each tree was sponsored by a different local business.

area and beautiful poppies.

Chocolate Chip Cookie Brownies

This is a scrumptious recipe that combines a chocolate chip cookie base with a brownie as the top layer.  I had actually never heard of such a thing until last week, and I decided I'd give them a whirl.  To get the recipe I used, click here.  NOTE******* I used white chocolate chips in the brownies!
