Nothing like an outdoor "mug--up" on a sunny March day......

By now, I'm just about done with winter.  Then a day like yesterday comes along..........Sunny, lots of fresh fallen snow, snowshoes and a group of people who haven't really been outside, for any extended period of fresh air and sunshine, in months.

A few quick phone calls, snowshoes and backpacks brought in from the garage, and we're ready to roll!!  It's amazing how much stuff can go in a backpack.  Besides the usual fare of red wines, cheeses, crackers, and chocolates, don't forget the true Newfoundland and Labrador delicacies like bologna, beans, toutons, smoked capelin and homemade bread for toasting on the open fire.  One thing for sure, we don't take this little "cup of tea" in the woods lightly!

After the fire burned down a bit, the old grill was secured over the fire, then a few roasted smoked capelin were enjoyed as the main appetizer..........

 Then,of course, the beans and wieners......

 We re-heated some pan-fried toutons........
 Grilled some beef bologna and moose bologna.....
 Toasted up some homemade bread....
and steeped some tea.....
 does it get any better than this???

Happy St. Patrick's Day!!!

True to form here in Newfoundland and Labrador, we got blasted with a major winter storm today....always happens around St. Patty's Day.  

I baked some french vanilla cupcakes, with cream cheese frosting--
a treat for my co-workers tomorrow!

Fine friends, fine wine, & fine food

We drove to Spaniard's Bay this weekend to to spend a night with good friends, Diane and Jerry.  Diane is our long-time friend, Sharon's older sister....and it is no coincidence that Sharon and Dave were in Spaniard's Bay this weekend as well.  It is a trip that we have all been planning and looking forward to for a long time.

We arrived around 3:30, as fluffy big snowflakes floated to the ground.  Diane & Jerry had everything under control for a wonderful evening and some great food.

Jerry set up three chickens on the rotisserie..........





...scooped out some plump, juicy hothouse tomatoes......







 

then Diane stuffed them with an amazing bread, bacon and smoked gouda combination, and set them aside to bake later.......

Could it get any better??
Sipping great wine and feasting on chicken.......

 Yuuummmmyy!!!


Then, after all that....yes.......there was more.............................

 The smell of the melted milk chocolate was fabulous........ 
as we all chatted, laughed and ate lots of fresh fruit......

 dipped in delicious, warm chocolate

What are these called????

When we were young children, mom always made these for special occasions such as birthdays, Christmas, and church "times"(socials)...............




It is simply a white cake mix, baked in a lasagna size pan......
  then cooled and cut in squares, like so............
Now, for the fun part---simply, mix a pk of jello, set until slightly thickened, dip a chunk of cake in the jelly., then roll in coconut
 and place on a platter to set completely.......
 I'm sure there are many different names for these, but whatever you call them--I call them delicious!!
